After each usage, disinfect and clean your wood cutting boards or butcher block countertop with full-strength white vinegar to keep them in good condition. The acetic acid in the vinegar functions as a disinfectant, destroying bacteria that are potentially harmful, such as E. coli. Surface wood fibers should never be exposed to bacteria such as Staphylococcus aureus, Salmonella water, or dishwashing soap since these substances can weaken them. In order to deodorize and clean your wooden cutting surface, sprinkle it with baking soda and then spritz it with undiluted white vinegar after it has been used. Using a clean, cold towel, wipe away any remaining foam and bubbling after five to 10 minutes.
